  • 8 lasagna noodles
  • 1 jar marinara sauce
  • 1 pound fresh spinach, chopped
  • 3 tablespoons Parmesan cheese
  • 8 ounces ricotta
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ medium onion, chopped
  • ¼ teaspoon oregano
  1. Preheat oven to 350 degrees F.
  2. Bring a large pot of water to a boil. Add 8 lasagna noodles and cook according to the directions. Remove when done and place flat on a baking sheet.
  3. Heat a tablespoon of hot oil in a medium skillet and sauté the onion. Add the marinara sauce and oregano. Stir and let simmer for 30 minutes.
  4. Chop the spinach and put it in a bowl with a quarter-cup water. Cover with plastic wrap and microwave 4 minutes. Remove the wrap slightly and drain. Blot the spinach with paper towels to remove more liquid.
  5. Add the salt, pepper, nutmeg, ricotta, and parmesan cheese and mix with the spinach.
  6. Put a thin layer of sauce on one side of each noodle. Evenly distribute the spinach mix to each noodle and spread it out over the sauce.
  7. Roll each noodle up and place it in the baking dish with the edge left from rolling on the bottom. The weight of the mix will help hold it firm. Set the rolls near each other for stability. Pour the remaining marinara sauce over the rolls and bake for 20 minutes.
  8. Take out of the oven and let sit 5 minutes before serving.
