Crab Lasagna with Lettuce and lemon

Ingredients
  • 3 tablespoons olive oil
  • 2 large onion, chopped finely
  • 2 tsp. Minced garlic
  • 2 cans plum tomatoes
  • 2 cans tomato paste
  • 1 cup cooking white wine
  • 1 cup chopped fresh basil
  • Salt and freshly ground pepper to taste
  • 1 ½ cup heavy cream
  • ½ cup red cooking wine
  • 1 ½ pound medium size shrimp, shells removed and deveined
  • 1 pound small scallops
  • 2 dozen little neck clams
  • 1 box lasagna noodles, uncooked
Filling:
  • 2 ½ cups ricotta cheese
  • 16 ounces cream cheese, at room temperature
  • 3 eggs
  • ⅓ cup heavy cream
  • 1 small package spinach, drained and chopped
  • 1 can crab meat, drained
  • 1 red bell pepper, seeds removed, minced fine
  • 1 bunch green onions, ends removed and minced
  • ⅓ cup chopped fresh basil
  • Salt and black pepper to taste
  • 2 16 ounce pkg. mozzarella cheese, shredded
Instructions
  1. To Make Seafood Sauce:
  2. Heat a skillet with oil over medium high heat.
  3. Add the onion, garlic, and sauté until onion is limp.
  4. Add the tomatoes and tomato paste.
  5. Let simmer on medium for about 7 minutes.
  6. Add in the wine, basil, salt and pepper to taste.
  7. Stir frequently.
  8. Let simmer uncovered over medium heat for about 30 minutes stirring occasionally.
  9. Add heavy cream into sauce.
  10. In another pan add red cooking wine.
  11. Add the clams and let simmer on low.
  12. Once clams have opened remove from wine and scoop out cooked clams.
  13. Discard any clams that did not open.
  14. Now add clams, scallops, and shrimp to red wine and let simmer until scallops are firm and shrimp is red in color. Remove from the heat.
  15. Preheat oven to 350F.
  16. Cook the lasagna noodles in boiling salted water until tender but yet still slightly firm.
  17. Drain and cool under cold running water.
  18. Filling:
  19. Add eggs, Ricotta, and cream cheese into mixing bowl and mix on medium speed until smooth.
  20. Add spinach, crab meat, bell pepper, green onions, basil, and heavy cream.
  21. Mix until spinach and crab is smoothly incorporated.
  22. Now add salt and pepper to taste.
  23. Spray large rectangular baking pan with cooking spray.
  24. Ladle a thin layer of the sauce, on the bottom of the pan.
  25. Cover the sauce with a layer of noodles.
  26. Top the noodles with half the filling, then half the tomato and seafood sauce.
  27. Cover the sauce with a layer of mozzarella.
  28. Place another layer of noodles over the mozzarella and spread with more filling.
  29. Top with another layer of mozzarella.
  30. Add a final layer of noodles and then the last of tomato-seafood sauce.
  31. Cover with the remaining Mozzarella cheese.
  32. Bake in oven until browned, about 45 minutes.
  33. Let stand for 15 minutes before serving.
  34. Serve on a plate with a wedge of lemon and tender leafy lettuce.
