In this shrimp scampi pizza recipe, the shrimp is cooked with the garlic and seasoned before being added to a pizza crust and topped with mozzarella. Ingredients
  • 2 cups shredded mozzarella
  • 1 lb big shrimp, peeled
  • 2 chopped garlic cloves
  • 3 tablespoons butter
  • 1 big pre-baked pizza crust
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons olive oil
  • Nonstick cooking spray
Instructions
  1. Preheat oven to 425 degrees F.
  2. Grease a baking sheet with the cooking spray.
  3. Put the olive oil and butter in a skillet and heat them over a moderate to high heat.
  4. Add the shrimp and garlic, cooking for a few minutes until the shrimp are pink.
  5. Season with the salt and black pepper.
  6. Put the pizza crust on the baking sheet and brush some of the butter mixture from the pan over it.
  7. Arrange the shrimp and cheese on the crust.
  8. Bake for about 10 minutes or until the top of the pizza is golden brown.
  9. Stand for 5 minutes then cut into wedges.

This delicious pizza is topped with mozzarella, shrimp scampi and there is some garlic in there too. If you like seafood you will love the flavor of this. You will notice the toppings are kept to a minimum so the flavor of the shrimp really shines through, although you will see we added a few green peas to our pizza, and that was to add a contrasting taste plus a contrasting color. You can do this too if you want, or else consider adding some corn or another colorful topping with a slightly sweet flavor to complement the shrimp.
