Lemon Tuna Fusilli Salad

This tempting tuna salad features canned tuna, olives and tomatoes, as well as fusilli, which is also known as corkscrew pasta or pasta twists. Fusilli is shaped like springs or screws, and it is good in salads, but also nice served with thick sauces or in casseroles. If you do not have fusillo, feel free to use spirali, rotini, farfalle, penne, or even conchiglie or rigatoni. In fact you can use pretty much pasta shape to make this pasta salad.

Start the pasta cooking first of all, because not only do you need to cook it, but you also need to give it time to cool. You can even do this a day or so ahead. The tuna, tomatoes and olives are colorful additions, while the aromatic flavors come from lemon juice, extra-virgin olive oil and basil. These are simple seasonings but they work beautifully in this dish. You can also add minced parsley if you want, or consider some capers, blue cheese or shredded mozzarella. Swapping the canned tuna for canned salmon gives the dish a brand new twist, so try that if you like, or even consider shrimp.

Serve the pasta salad on a bed of lettuce leaves. It makes a nice appetizer or lunch. If you are serving it as your first course, consider making the portions smaller (so this recipe would feed 8 not 6 in that case) else it will be too filling.
